Our Process
There are four main stages in the process before your smart snack is ready for you to eat. The important thing to remember is that nothing is added, and none of the goodness is taken away!
Why is freeze drying better?
Drying is a great technology for preserving food because it removes water. And water is what causes bacteria to grow and the fruit to deteriorate.
However standard drying has a big drawback: the application of heat. Temperatures above 30 °C are required in all other drying methods and this has several disadvantages. Primarily the degradation of vitamins, essential nutrients for our health. Secondly, the product often becomes squishy and collapses, resulting in a loss of taste and organoleptic properties.
The solution... drying at sub-zero temperatures!

The innovation
Freeze drying is great but is very energy-intensive. That's because drying at sub-zero temperatures is difficult, especially in summer when you can find most of the yummiest fruit.
Fortunately the Opi Frutta team has developed a new process to freeze dry at a fraction of the energy consumption!
