There are four main stages in the process before your smart snack is ready for you to eat. The important thing to remember is that nothing is added, and none of the goodness is taken away!
STEP ONE
CUTTING
The fresh fruits are cut into slices and processed straight away to avoid any degradation
STEP TWO
FREEZING
The fresh fruit is frozen rapidly so that pure water separates and solidifies into tiny crystals of ice
STEP THREE
DRYING
The fruit is placed in vacuum so that tiny crystals of ice sublimate or, in other words, become vapour that is extracted from the fruit leaving it dry and crunchy
STEP FOUR
PACKING
The dried pieces of fruit are then immediately packaged in dry atmosphere to avoid the contact with air moisture and preserve all their freshness
Why is freeze drying better?
Drying is a great technology for preserving food because it removes water. And water is what causes bacteria to grow and the fruit to deteriorate.
However standard drying has a big drawback: the application of heat. Temperatures above 30 °C are required in all other drying methods and this has several disadvantages. Primarily the degradation of vitamins, essential nutrients for our health. Secondly, the product often becomes squishy and collapses, resulting in a loss of taste and organoleptic properties.
The solution… drying at sub-zero temperatures!
